Kala Namak, also called black salt, is used as a seasoning. Kala Namak or black Indian salt is an extract of Salsola stocksii (a herbaceous plant used as a seasoning to impart umami flavor). The salt gives food a characteristic eggy flavor due to its sulfur content.In India, this is a particularly desirable effect when preparing fruit dishes, salads, chutneys or the popular raita (Indian tarator). Indian salt is recommended for seasoning vegetables and exotic fruits, as well as fish. Added to fruit juices, it gives an unusual taste.

How to use: for dishes with chicken, fish, rice. It is unusual to cook with it, although fried rice is honestly sprinkled towards the end of cooking in the wok. Add to yogurt dishes and drinks.
